BRINJAL OIL FRY

Brinjal are known as EGG PLANT. Brinjal, sambar powder ,garlie, grind coconut,aniseed.chopped onion, have a main ingredients used to bring in a mild spicy and sweet taste.It takes 30 minutes preparation and easy to cook. cut the brinjal then drop in water will not change in brownish color.

INGREDIENTS
200 gram brinjal(2-3 slits)
1/4 cup of grind coconut
1/4 cup of water
2 big onion
4 pieces of garlie(scrouge)
5 tsp oil
1/4 tsp aniseed(scrouge)
3 tsp sambar powder
2 tsp salt
1 tsp mustard seed
1 tsp urad.
Take the pan,add oil and heat oil
Add 1 tsp urad ,until wait for brownish color.
Add 1 tsp mustard seed,until wait for explosive.
Add chopped onion
Add sprinkle salt to saute.
Add brinjal to saute ,until wait for brownish color in medium flame.
Add 3 tsp sambar powder and 2 tsp salt.
Add 1/4 cup of grind coconut .
Add 1/4 cup of water mix well.
Close the pan until wait for 10 minutes in medium flame.
Add aniseed and garlic (scrouge) mix well.
Add curry leaves.
Serve it.
