kumbakonam kadappa / Restaurant style


kumbakonam kadappa is a south indian popular dish for idly, dosa manily in Thanjavur, KUMBAKONAM. Moong dal , potato, onion , tomato ,green chilli , coconut ,ginger, garlic opium poppy is the main ingredients of the dish.


INGREDIENTS:

100 Gram moong dal
2 potatoes
1 big onion (chopped)
1 tomato (chopped)
2 green chilli
3/4 cup of coconut
small pieces of ginger
3 pieces of garlic
2 tsp of opium poppy
2 tsp of roasted chana dal
1 carrot (small cubic sizes)(Optional)
1 tsp of fennel seed
1 cloves
small pieces of cinnamon
2 tsp of salt
water
oil

PROCESS 1:

MOONG DAL AND POTATO BOIL


  • Take the cooker add moong dal and dry saute in 2-3 minutes

  • Dry saute well


  • Pour the 3 cup of water

  • Add potatoes

  • Close the cooker and waiting for 3 whistle

  • Moong dal and potatoes cook well


  • Take the potatoes and peel the skin

  • Potatoes mashed well

  • keep aside

PROCESS 2:GRIND IT


  • Cut the coconut


  • Take the jar

  • Add coconut, green chilli, garlic, ginger, roasted chana dal

  • Add opium poppy

  • Pour requried amount of water and grind it

  • Grind well and keep aside

PROCESS :3 KADAPPA MAKING


  • Take a pan add oil and heat it

  • Add fennel seed and until wait for golden brownish color

  • Add cinnamon and cloves

  • Add chopped onion and saute in 2-3 minutes

  • Onion saute well and add tomato to saute in 2-3 minutes

  • Tomatoes saute well

  • Add carrot and saute in 2-3 minutes

  • Carrot saute well

  • Pour the 4-5 cup of water

  • Add mashed potatoes

  • Add mashed moong dal

  • Add half tsp of tumeric powder

  • Add grind paste


  • Add salt

  • To boil it

close the vessel to boil in 10 -12 minutes
  • After 10 minutes

  • kadappa get ready

  • Add coriander leaves and curry leaves

  • serve it
