Vegitable Aviyal

Ingredients
Vegetables
Carrot
beans
brinjal
raw banana
potato
green chilli
curd
coconut
cumin seeds
curry leaves
urud dal
mustard
wash and cut the vegetables to same size
Have these vegetables on a vessel and pour water. Water quantity should be sufficient to boil the vegetables.
Add some salt to it
Close the vessel with a lid and allow the vegetables to get cooked in the boiling water
In the mean time take coconut, green chilli and cumin seeds on a blender and blend it. Make sure it is not very smooth paste
Check if the vegetables are cooked
Add the masala made of coconut once the vegetables are cooked
Mix the content well
Let it cook until raw smell of coconut is out and the water is drained up. Meanwhile prepare the garnishing
Take 2 tbspoon of gingelly oil on a pan
Add mustard seed and urud dal. Once mustard seeds pops add curry leaves and switch off the stove
Once vegetables are cooked and water is drained, add curd to it and mix
mix well
Add contents prepared for garnishing
Serve
