Wild lemon pickle (நார்த்தங்காய் ஊறுகாய்)

Wild lemon pickle is the simple dish and it's a best combination for curd rice. Wild lemon, red chill powder, mustard seed , asafoetida is the main ingredients of this dish.
INGREDIENTS
4 Wild lemon
1 tsp of fenugreek
small pieces of asafoetida
1 tsp of mustard seed
50 gram of gingelly oil
2 tsp of salt
Take a vessel and heat it
Pour the 2 cup of water
Add wild lemon and add 1/4 tsp of salt
Close the vessel
Simmer for 15 - 20 minutes on medium flame.
Wild lemon boil well
Now switch off the flame
Take the wild lemon one by one
Now transfer the plate and keep under the fan
Cut the wild lemon small cubic sizes
Take a pan and heat it
Add 1 tsp of fenugreek with dry saute.
Until wait for golden brownish color
Fenugreek saute well
Take a pan add oil and heat it
Add Asafoetida with saute.
Until wait for golden brownish color
Then transfer the plate
Crush the fenugreek and Asafoetida
Take a pan add oil and heat it
Add 1 tsp of mustard seed and until wait for explose
Then add wild lemon
Add 2 tsp of salt
Add crushed fenugreek and Asafoetida
Add red chilli powder
In all ingredients mix equally
Then close the vessel to gap
Simmer for 10 - 20 minutes in medium flame
Take a vessel and heat it.
Add gingelly oil
Simmer for 5 minutes in medium flame.
Pour the heated oil in wild lemon pickle
Serve it
